Oxford University’s ‘Madagascar Campaign’ Book Collection

The Oxford Roots & Shoots ‘Madagascar campaign’ sprung to life in May 2010, just towards the end of the academic year. Josia Razafindramanana gave us a kick start to our projects, having coordinated Roots & Shoots in Madagascar. We began with our end of academic year book collection, with desperately needed books to be sent to schools and universities in Madagascar. Students from across the university donated 9 boxes of books and set us the awesome task of raising £800 to ship them to Madagascar.

This new academic year we have been able to devote more time to our project and are underway with plans for a Malagasy themed fundraising night in approximately 3 weeks time. The highlight of the evening …

Hi from the thawing North! – Highlands Mission Update!

I can’t begin to write this posting without first offering a huge Thank-You to everyone at Roots & Shoots for our Gold Award. It helps that we are family based and that the agents who are able bodied do not appear to perceive other agents’ difficulties as a barrier to certain experiences. I think one of the greatest assets of the group is their willingness to adapt and accommodate the array of strategies we employ.

St. Luke’s Science & Sports College – Mission Update!

What a busy but productive few months we have had!

In school we raised £2169 for Haiti and donated this to Shelterbox.
Our links with the Congo continue as we support the development of a school and the empowerment of the children as they are able to access knowledge.
Students in English wrote to Nestle and as a direct result Nestle switched to Fair Trade Sources.
Visiting medics came into school and gave a very informative lecture about Madagascar including its environmental issues and the project work on health and contraception.
Two members of staff went to Nigeria and we are now forming active links across the curriculum.
Within the college we have planted up four raised beds with vegetables, herbs and soft fruits. …

Spicy Fish Cakes

Ingredients
MAKES 4

250g cooked or canned fish
250g cooked and mashed potato
Salt and freshly ground black pepper
1 red chilli, chopped
1 tsp lemon juice
1 egg, beaten
Fresh bread crumbs
1 egg, beaten

Directions

Remove the bones and skin from the cooked fish. Flake and mash onto a plate.
Add fish to mashed potato, beat until smooth.
Season and add chilli, lemon juice and egg, beat together.

MAKES 10-12 MUFFINS

250g self raising flour
2 tsp baking powder
100g caster sugar
250ml milk
1 large egg
90ml vegetable oil
150g raspberries
150g white chocolate chips

Directions

Preheat oven to 180?C (160?C if using a fan oven) or Gas Mark 4. Place the muffin cases into a muffin tray.
Place all of the ingredients apart from the raspberries and chocolate into a bowl and mix to form a smooth batter.

4 peaches, halved and stoned
caster sugar
4 scoops of vanilla ice-cream

For the Raspberry Coulis:

300g (10 ½ oz) raspberries
2 tablespoons caster sugar or to taste
1 tablespoon lemon juice

SERVES 3-4

3 tablespoons of rolled oats
80 ml of apple juice
2 apples, grated
half a large tub of greek style yoghurt
honey to taste
a handful of nuts – whichever you like best, but can be omitted
fresh fruit – raspberries, strawberries, sliced peaches or nectarines, etc.
